Sargent Choice Avocado Chocolate Mousse

 Ingredients

  • 2 very ripe avocados*
  • ½ cup dark or bittersweet chocolate, melted
  • ¼ cup cocoa powder
  • ¼ cup milk or non-dairy alternative
  • 2 tablespoons maple syrup, honey, or agave
  • 2 teaspoons vanilla extract
  • Pinch sea saltTopping Ideas: Berries, banana, cherries, almonds, whipped cream, yogurt, granola, graham crackers.

Directions

  1. In a food processor or high-speed blender, combine avocados, melted chocolate, cocoa powder, milk, maple syrup, vanilla extract and salt. Blend until smooth and creamy, about 2 minutes, stopping as needed to scrape down the sides.
  2. Divide the mousse equally into four bowls or jars, and chill for at least one hour to get a more mousse-like consistency.
  3. Serve mousse cold with desired toppings.

What We Liked

  • The avocado gave the mousse an incredibly creamy consistency without tasting like avocado.
  • The mousse was light and not overly sweet or rich.
  • The mousse could be batched, prepared and stored in the freezer.
  • This was a very easy recipe to make and required minimal kitchen appliances other than a blender and a microwave to melt the chocolate.

Suggestions

  • Add toppings to the mousse such as nuts, fruits or yogurt.
  • Leave the mousse in the fridge overnight for a thicker consistency.
  • Store the mousse separately and combine the toppings prior to consumption.
  • Change the percentage of bittersweet chocolate according to how bitter or sweet you desire the mousse to taste.
  • You can use overripe or browning avocados; once they are combined with the chocolate, the color will blend in.
